Missy's Skillet Chicken Pot Pie

Ingredients

½ cup butter

½ cup all purpose flour

1 ½ cups chicken broth

1 ½ cups milk

1 large onion, chopped

2 stalks of celery, sliced

4 cups shredded cooked chicken

2 cups frozen cubed hash browns

1 cup matchstick carrots

1 cup frozen peas

2 pre made pie crusts or homemade.

 

*Heat oven to 350 degrees. Lightly grease large, flat frying pan that is oven safe.

*In sauce pan, melt butter and gradually add flour. Whisk 1 minute

*Gradually add chicken broth and milk whisking often. Cook 6-7 minutes until thickened. Remove from heat.

*Melt another 2 tbsp butter in pan, adding onions and celery. Cook until tender.

*Add chicken, potatoes, carrots and peas.

*Add sauce and stir well to combine.

*Press one pie crust into skillet and top with filling.

*Top with remaining pie crust. Brush with egg white and cut 4 slits in the top of pie.

*Bake for 1 hour and 5 minutes.
